How to Store Makhana for a Full 12-Month Shelf Life

A 12-month shelf life on a makhana spec sheet is a conditional promise. The condition is moisture, and it is almost the only thing that matters.

Why makhana fails

Popped makhana is a dry, porous, highly hygroscopic structure — it is very good at pulling water out of the air around it. Left in a humid environment, it does not rot or grow visible mould in any obvious way. It simply loses its crunch, and a makhana that has lost its crunch has lost its entire product proposition.

Because the failure is textural rather than visual, it is often discovered at the wrong end of the chain: by a distributor opening a carton, or worse, by a consumer opening a pack.

The numbers that matter

• Moisture at packing: below 10%. Above that, the clock starts running short regardless of packaging.
• Storage humidity: below 60% relative humidity. Coastal warehouses through a monsoon are the classic failure environment.
• Storage temperature: cool and stable. Swings matter more than absolute temperature, because they drive condensation inside packaging.
• Light: keep it off. Direct sunlight will not soften the product but will degrade colour over months.

Choosing a pack format

Pack format should follow the destination and the transit time, not the price list.

Practical warehouse rules

1. 01Keep cartons on pallets, never directly on the floor — concrete wicks moisture upward.
2. 02Leave an air gap against external walls, particularly walls that get afternoon sun.
3. 03Rotate strictly on first-in, first-out. Makhana gives no visual warning that a lot is aging.
4. 04Reseal opened bulk packs the same day. An open carton in a humid warehouse can soften within a week.
5. 05Store away from strong-smelling goods. A porous, neutral-tasting product will take on odours.

None of this is difficult. It is simply the difference between a supplier's 12-month shelf life being a genuine specification and being a number on a sheet.
