Sourcing Makhana in Bulk: A Buyer's Checklist

Makhana is an agricultural product with a seasonal supply curve, wide natural variation and no universally enforced grading standard. That combination makes it unusually easy to agree a price and discover later that you and your supplier were describing different products.

The fix is not a longer contract. It is a specification with numbers in it.

1. Pin the specification

• Grade, with a diameter tolerance — not just a sutta label.
• Moisture ceiling at the point of packing.
• Maximum percentage of broken or damaged pops.
• Foreign-matter limit.
• Colour range, described or matched against a retained sample.

Ask whether these are recorded per lot and shared with the consignment. A supplier who measures them will say yes immediately. A supplier who does not will change the subject to price.

2. Get a retained sample, and keep it

Approve a physical sample and keep your half of it sealed and dated. When a later consignment feels different, a retained sample turns an argument into a comparison. Without one, both sides are relying on memory of how something looked three months ago.

3. Understand the seasonality

Makhana harvest and processing follow a season. Availability of the largest grades in particular tightens as stock depletes through the year, and prices move accordingly. If you need 6+ Sutta consistently, that is a planning conversation to have before you need it, not a spot purchase to make when you do.

4. Match the pack format to the journey

Bulk cartons are cheaper than vacuum packs and completely adequate for short domestic transit into a dry warehouse. For a long sea leg into a humid destination, that saving disappears the first time a container arrives soft. Decide the format from the destination and transit time, then price it.

5. Confirm documentation early

• FSSAI licence for the manufacturing entity.
• IEC and any export registrations relevant to your destination.
• Commercial invoice, packing list and certificate of origin.
• Phytosanitary certification where the destination requires it.
• HSN classification agreed in advance, so duty is not a surprise.

Documentation problems do not usually stop a shipment. They delay it, at a port, while the product sits in a container in exactly the humidity you were trying to avoid.

6. Start smaller than you plan to end

A first order at full volume tests the price. A first order at a fraction of it tests the supplier — their consistency, their documentation, their response when something needs fixing. The second thing is considerably more valuable to know.
